LUCE MOUTARDE DE DIJON

La moutarde (du latin mustum ardens, moût ardent) est un condiment préparé à partir des graines d'une plante de la famille des Brassicaceae, appelée aussi moutarde. Ces graines sont petites, d'un diamètre approximatif de 1 mm, elles sont réduites en farine et mélangées à du verjus. La moutarde de Dijon est obtenue à partir de deux types de graines uniquement : les noires et/ou les brunes. C’est la seule à bénéficier des appellations « forte » ou « extraforte ».
